Hand-picked

Leaves harvested by hand in Amendolara each August. Stems removed, leaves washed.

Sun-dried

Dried in the Calabrian sun for several days. The concentration of flavour is extraordinary.

Leaves macerated and infused into high-ABV spirit in North London. A slow, thorough extraction.

CO₂ Extracted

A second extraction using critical CO₂ — capturing volatile aromatics lost in heat-based methods.

The Ingredient

Fig Leaf Is Not Fig

And that's the whole point.

Most people expect fig: sweet, jammy, fruit-forward. Fig leaf is something else entirely. Cut a fresh leaf and you get something green, milky, almost tropical — closer to coconut and fresh grass than to the fruit above it.

The reason is chemistry. Fig leaves contain lactones — the same compound class that gives coconut its character — combined with a natural green bitterness that makes it unlike anything else behind the bar.

Why the coconut note?

Lactone compounds in fig leaves produce a soft, milky coconut character — botanical, not sweet.

Why the green bitterness?

Sun-drying concentrates the leaf's chlorophyll-derived tannins, giving the liqueur its clean, fresh edge.

Why bartenders use it

Aromatic complexity without heaviness. Works in low-ABV builds, vermouth drinks, and spirit-forward serves alike.

Our Story

A singular expression
of fig leaf.

One product, done properly.

Parafante Liqueurs is a North London liquorificio built on a simple idea: take the most underrated ingredient in Calabrian nature — the fig leaf — and show the world what it can do.

Every August, we travel to Amendolara in north-east Calabria. We pick fig leaves by hand, remove the stems, wash them, and dry them in the sun for days. Those leaves then travel to London, where they are macerated, CO₂-extracted, blended, and bottled. No additives. No shortcuts. Just the leaf.

The Name

Who was Parafante?

Paolo "Parafante" Mancuso

Born in Cosenza, Calabria, in the late 18th century — a brigand, a rebel, a folk hero. He took up arms against foreign rule and became a symbol of the defiant, independent spirit of southern Italy.

Figures like Parafante are still remembered across the Mezzogiorno. Not as criminals, but as people who refused to be told what to do.

We named the brand after him because that spirit is still worth raising a glass to.
